Camping recipes: one-pot wonders

Camping food doesn’t have to be squashed energy bars and baked beans. It’s possible to have delicious, easy meals while you’re camping, and one-pot stove cooking is the simplest way to fill tummies. Remember to bring knives, a chopping surface, and a method of holding the pot over heat (grill racks are popular). Whether you're camping with the children or experiencing your first motorhome tour, here are some quick camping recipes that only need one pot and will leave the whole family full and satisfied.

One-Pot Stew

2 tbsp olive oil

2 garlic cloves, crushed

1 onion, chopped

500g mixed vegetables, chopped (carrots, fennel, squash, sweet potatoes and turnips are great)

800g skinless, boneless chicken breasts, chopped

Small glass white wine

  1. Heat oil over a source of heat, like coals or a fire. Cook onion and garlic until fragrant. Add mixed vegetables and cook for 5 min, then add chicken and cook until browned, another 5 min.
  2. Add wine and boil for 1 min, then season. Add around 400ml water, cover, and place in coals for around 30 min, until chicken is cooked and veg is tender.

Enjoy a hearty stew

Anytime Eggs

4 tbsp olive oil

1 onion, sliced

400 new or sweet potatoes, sliced and dried in tea towel

2-4 eggs

Paprika

Parsley

  1. Heat olive oil in the pot over a source of heat. Add potatoes and onion, season and cook until potatoes are done, for about 25 minutes.
  2. Add eggs and cook until set. Sprinkle over paprika and parsley.

Camping Pasta

1 tbsp olive oil

1 onion, chopped

2 garlic cloves, chopped

1 can chopped tomatoes

400ml can vegetable broth

225g pasta

Handful basil leaves

Parmesan cheese

  1. Heat olive oil in pan over a heat source. Cook onion and garlic for 5min.
  2. Add tomatoes, broth, basil and pasta. Season and cover until it boils, then uncover and stir frequently until pasta is cooked. Add basil and Parmesan.
