Camping recipes: One-pot wonders

Camping food doesn’t have to be squashed energy bars and baked beans. It’s possible to have delicious, easy meals while you’re camping, and one-pot stove cooking is the simplest way to fill tummies. Remember to bring knives, a chopping surface, and a method of holding the pot over heat (grill racks are popular). Here are some quick camping recipes that only need one pot and will leave the whole family full and satisfied.

One-Pot Stew

2 tbsp olive oil

2 garlic cloves, crushed

1 onion, chopped

500g mixed vegetables, chopped (carrots, fennel, squash, sweet potatoes and turnips are great)

800g skinless, boneless chicken breasts, chopped

Small glass white wine

  1. Heat oil over a source of heat, like coals or a fire. Cook onion and garlic until fragrant. Add mixed vegetables and cook for 5 min, then add chicken and cook until browned, another 5 min.
  2. Add wine and boil for 1 min, then season. Add around 400ml water, cover, and place in coals for around 30 min, until chicken is cooked and veg is tender.
